The four spikes on the metal ring stop the joint from moving around while being carved and they can be reversed for storage, slotting into the four holes in the board. The grooves prevent juices going anywhere near the tablecloth.
Most of all, I’ve just spent a small fortune on a professional knife set that I want to avoid damaging, so I’ve thrown out the stainless steel carving dishes in favour of this rubberwood one.
Furthermore the wood is from a sustainable source – Southeast Asian rubber trees. When the trees have aged and their flow of latex is reduced, they are systematically felled and replanted. Ecology at its best.
